Summary
The Inno-Lab4Pro project realizes the laboratory-scale mapping of the bio-economic production system of protein-rich matrices and enables the comprehensive analysis of innovative value chains. The planned compilation of different tailor-made process modules for the sustainable production of protein-rich food is intended to allow for the first time a systemic evaluation with regard to the material, energy and information flows with simultaneous quality and safety assessment of the entire process chain and thus makes an important contribution to a holistic understanding by integrating smart, innovative technologies in protein production and supply.
