Summary
Packaging of fruit and vegetables is necessary to extend shelf life and increase safety. The use of plastic packaging is increasingly coming under criticism. An alternative can be the coating - a thin film on the surface of the product, which increases the CO2 concentration in the product and reduces the O2 level; it also reduces water loss. Within the scope of the project, various aspects of the coating will be put to the test such as: - physiological effect of different (edible) coatings on the market on selected products - Effect of the coating on the external appearance and especially on the smell of selected fruits and vegetables In addition, consumer surveys on products with coating will be carried out .
